Nasi Lemak Sambal

Sambal for Nasi Lemak

Ingredients
Tamarind Juice
Chopped onions
Dried chillies
Ikan bilis

Method
Soak a teaspoon of tamarind in half a bowl of water. Deseed chillies and soak in hot water until chillies are soft. Blend the chillies and water.

Deep fry ikan bilis in oil until brown and crispy. Remove ikan bilis and set aside. Use the oil to fry chilli paste and onions. Fry for a few minutes. Add tamarind juice, sugar and salt to taste.

Chicken Curry

Ingredients

Curry powder
A dash of yellow ginger (mashed or powder form)
Chicken
Potato
Chopped onions
2 teaspoons of chilli powder
1.5 small cans of coconut milk (canned one will do)
Salt

Marinate chicken pieces in curry powder and yellowginger powder for a few hours. Stir fry potato in oil. Set aside potato.
Use the same oil and fry chopped onions and chillipowder. Fry for a few minutes and add chicken pieces. Fry until some parts of chicken looked cooked. Addcoconut milk. When mixture is boiling, add potatoes. Cover and cook over low fire until potatoes are soft and chicken is cooked. Chicken tends to cook faster than potatoes so you may want to take the chicken out and put it aside. Leave potatoes to cook in the curry gravy until potatoes are soft. Mix chicken and potatoes together and the curry is done!
